Responding to the Refugee Crisis

The current refugee crisis has been described as the worst for almost a quarter of a century.

United Nations spokesperson Stephane Dujarric says “It’s true we live in a moment in history where there’s never been a greater need for humanitarian aid since the United Nations was founded”.

You can also volunteer, The Red Cross need volunteers to help refugees settle in New Zealand, and the Auckland Refugee Council also has a volunteer programme.

You can help by providing employment. Work and Income want to hear from people who have an idea for a project that could help get migrants and refugees into work.


Lemon barley and ginger cordial

Lemon barley and ginger cordial

100g barley
6 cups water
250 ml lemon juice – approx 3-4 juicy lemons
zest of 2 lemons
2 -4 slices of root ginger
½ -1 cup of sugar – use the lesser amount if you plan to add honey when serving hot

Rinse the barley well under running water then place in a saucepan with 6 cups of water and the lemon zest and ginger slices, bring to the boil and simmer for 10 minutes then drain the barley liquid into a jug discarding the barley and ginger.
Return the liquid to the saucepan and add the lemon juice and sugar and heat until the sugar is completely dissolved. Pour into a clean bottle and store in the fridge.
To serve use a Ratio of 1 part cordial to 2 parts hot or cold water.
